Lovers of caviar can revel in head chef Andrea De Paolo’s New Year’s Eve Black & Gold Gala Dinner menu ($450/person). Designed to showcase Antonius Caviar’s Oscietra caviar - harvested from Russian Sturgeon from Lyna River, Poland - the six-course tasting menu revolves around the gleaming gems’ uniquely briney yet nutty profile. Key dishes include the sublime pairing with smoked eel cream and egg “Milanese” style as well as crunchy grilled asparagus layered with almond cream. Diners are also given complimentary access to the Countdown Party over at the Terrace Lounge, where their resident DJ will be spinning a series of high-octane beats to go with the unparalleled view of Singapore’s sparkling skyline.
New Year’s Eve Black & Gold Gala Dinner is available on 31 December 2019 from 9pm. Dinner is priced at $450/person, with option of free flow Champagne, house wines, spirits, and beer from 8:30pm to 11:00pm at an additional $200. The Gala Dinner includes complimentary access to the Countdown Party at Terrace Lounge and a glass of Champagne/person for the countdown.

At 15 Stamford by Alvin Leung, Hong Kong-based maverick chef Alvin Leung has impressed Singapore with an adventurous yet accessible menu - and its New Year’s Eve Set Menu ($168, with a complimentary glass of Champagne) is no different. Luxurious ingredients, from Wagyu beef cheek to black truffles, are majicked into a six-course Asian-fusion extravaganza. Highlights include Leung’s take on the ubiquitous laksa, with Hokkaido scallops laid atop a bed of Israeli couscous and topped with dried shrimps and laksa espuma, as well as his reimagination of the humble Chinese New Year treat of pineapple tart. Book your tables early for complimentary seats to the exclusive vantage point for fireworks viewing come midnight are limited.

Those preferring a more intimate celebration can opt for Cable Car Sky Dining. Available in two styles, the Stardust Cabin for couples ($328) or the Countdown Celebration Cabin small groups of up to six ($498), guests can toast to the new year with an unparalleled view of Singapore’s sparkling skyline and - of course - the fireworks display. Couples can indulge in live maine lobsters or a sumptuous bourbon-braised Wagyu short rib alongside a glass of wine, while groups can usher in 2020 with two bottles of Champagne, sparkling juice and a swoon-worthy chocolate and nuts platter.
The Stardust Cabin is available on 31 December 2019 from 6pm to 10.30pm at $328/cabin (for one couple). The Countdown Celebration Cabin is available on 31 December 2019 from 10.30pm to 12 midnight at $498/cabin (up to six persons).

For somewhere a little more removed from the predictably packed central districts, head to Como Club. The newly-opened concept is housed in the same building as other restaurants in the Como stable, and will be hosting a Bossa Nova-themed countdown party for NYE. Drinks like wine, Taittinger Brut, and cocktails like basil-jalapeno margaritas and cucumber martini will flow freely. Entertainment comes in the form of smooth Bossa Nova vocals by Dawn Ho, and a live DJ set from DJ Joey Fitzgerald.

Countdown with a lavish dinner and drinks at Ce La Vie, complete with some of the best views in the city. Start your night with a 7-course dinner (from $298, 2 seatings)with indulgences like octopus glazed with a black truffle sauce; and Mayura wagyu striploin – all while you're entertained by professional dancers. Post dinner, head for the venue's Vegas-themed countdown for the first party of the new year.

At the newly-opened VUE, chef Sam Chin holds court. The rooftop bar and restaurant will be offering a luxurious buffet with highlights like an oyster bar, caviar station, and a selection of charcuterie including prized Pierre Oteiza Bayonne and Jamón Ibérico de Bellota. There'll also be a roast station with a show-stopping whisky-aged USDA Prime Black Angus; as well as free-flowing drinks to usher in a new year.
The New Year’s Eve Fiesta at VUE is happening on 31 December 2019 from 10pm to 1am. Earlybird price of $288++ for the 1st 100 guests. It is priced at $388++ per person.
OUE Bayfront, 50 Collyer Quay, Level 19Atlas
Sip on the bar’s renowned selection of craft cocktails (that won its no.8 place on the World’s 50 Best Bars list), house pour Champagne, wines and beers while jiving to DJ Titus’ signature blend of urban-cum-hip-hop tunes. Tip: You’ll want to make a beeline for the bar and grab the ATLAS Martini. Head bartender Jesse Vida, a veteran of the New York bar circuit, serves up a punchy yet floral rendition with splashes of orange bitters and Champagne vinegar. The kitchen will also be doling out favourites from their grazing menu like moreish arancini, mini croque monsieur and jamon on toast.
The New Year’s Eve Party is available on 31 December 2019 at $220 (standing ticket) and $280 (seated ticket, with minimum reservation of six pax), with free-flow champagne, cocktails and canapes.
