[dropcap size=small]E[/dropcap]dge’s winning formula is clear to see : it cuts no corners. The vast dining counters are staffed with up to three cooks per station, each pushing out curiously small batches of food in a constant stream.

“It’s fresher this way,” shares one young assistant, when quizzed on why her team would undertake the extra hassle. They’re also happy to elaborate on the dishes, even dispensing preparation tips to inquisitive guests. Likewise, the restaurant is well-crewed with wait staff who keep glasses filled, used plates cleared and napkins re-folded – all without diners noticing. Despite a full house (on a Monday night, no less), the massive 316-seater yields an intimate experience, with servers pausing occasionally to check if guests are well provided for.


The queues at ‘live’ stations’, which are the bane of some buffets, have been done away with. At each table, diners will find wooden sticks engraved with their table number in a small drawer. Hand these to the chefs at the cooking stations, state your preferences, and they’ll see to it that your order, be it a grilled beef steak or piping hot noodles, is sent to you a few minutes later.

Yet the sheer breadth and depth of the offerings, combined with an unrivalled consistency of taste and quality, forms the restaurant’s real edge over many of its contemporaries. Be it the Korean rappoki (rice cakes), free-flow Ohmi wagyu beef and various sashimi types, shucked oysters or the humble cheese au gratin – each dish delivers delicious authenticity.

The same pride in their creations carries over to the cheerfully-decorated dessert section, which is itself a mini-buffet. Local kuehs and biscuits are there for those with a taste for nostalgia, alongside cocoa-dusted mochi and the usual tart / cake suspects.


There’s a delightful durian pengat, quirky ice-cream and sorbet offerings, and a potent Grand Marnier fruit punch (keep the kids away). A chocolate fondue and a la minute waffles round off the list.

Indeed, the only catching-up Edge needs to do is in pricing – it’s among the most pocket-friendly options in town. Be sure to book ahead of time, and ask for seats close to the counters, unless walking it off is part of your buffet routine.
