Spanish tapas bar Esquina has a fresh face fronting it – Carlos Montobbio. The former Anti:dote chef, known for his creative bar bites, injects the same innovation and finesse into the menu. While the traditional Spanish omelette is often a rich deep-dish of potatoes and egg, Montobbio lightens it with his version of a small, fluff y disc peppered with olive oil caviar and served on a delicate slice of toasted sourdough. The finesse isn’t lost on heartier dishes either, with Spanish octopus cooked sous vide then charred for a lovely smoky edge. A sprinkle of oyster leaves adds a hit of umami.
