The folks at consummate tze char fusion joint New Ubin Seafood know their way around heat, which is why they’ve laid down their woks to cook in a way more suited to the festive season. That is, traditional house-smoked turkey, along with chicken and chestnut stuffing – served either whole, or as the breast alone if breaking down the massive bird might be too inconvenient. Either way, you’re getting a jar of smoked Maldon sea salt to pair with the festive roast. Alternatively, return to grub that the establishment made its name on – eclectic, tze char-esque set menus with the option of a trio of crabs a la any style you’d like as a centrepiece.

Run the gamut of festive delights with Atrium Lounge’s selection of roasts – gingerbread-spiced boneless ham, salmon en croute or a hulking 180-day grain-fed tomahawk steak, slow roasted and served alongside sauteed veg and red wine sauce. As for their turkey selection, take your pick: apart from the traditional roasted turkey, there’s Indonesian barbecue-esque, complete with sayur lodeh and turmeric rice; as well as a Christmas trip to Japan with a sake and mirin-brined turkey along with wafu-dressed greens, teriyaki sauce and seasoned rice.

Carousel’s also got their take on South Asian and Japanese-inspired turkeys – the former comes slathered in spicy sambal hijau, atop a bed of nasi goreng, serunding and spiced chicken stuffing. The latter is marinated with miso and seaweed and served with garlic fried rice, curry potatoes and sesame sauce. Other festive roasts include traditional roast turkey, coffee-glazed veal spareribs and slow-roasted leg of lamb. There’s also their Yule log, given the ever-popular burnt cheesecake treatment with Valrhona chocolate crème and berries to finish.

For a departure from the norm, turkey wellington from Resorts World Sentosa might be what you’re looking for. Expect a roulade of turkey breast, portobello mushroom and prosciutto lovingly baked in puff pastry. Else, there’s always the turducken – a chicken stuffed in a duck, stuffed in a turkey if you’re wondering. Sausage filling, roasted veggies and other accompaniments round out the meal (for a week). If you’re looking for a dessert centrepiece, opt for executive pastry chef Kenny Kong’s elderflower festive ball. The reinterpretation of a Christmas Noel Ball comprises a coconut praline and French ruby chocolate shell hiding a cache of delights including elderflower-infused sponge, nut streusel and almond biscuits.

Blue Jasmine
Thai specialty chef Ninaporn Doungiaisantisuk heads the kitchen at Blue Jasmine, and has brought culinary influences from Chiang Rai, a city in Northern Thailand, to what she does at the restaurant. For Christmas, that means Esarn (cuisine native to northeasternThailand) paste as the marinade for the festive turkey, including spices like galangal, lemongrass and coriander. The bird is then twice roasted for an aromatic, moist Christmas roast that’s a far cry from the ordinary. Buttered vegetables, smoked chili sauce, crabmeat pineapple fried rice and mango sticky rice end off the meal for a satisfyingly indulgent Thai-style soiree.

As it happens, knowing your way around fire and smoke work wonders for a Christmas roast.
