The Preludio Story gathers the best of chef Fernando Arévalo’s dishes
For a limited time only, the contemporary fine dining restaurant takes a trot down memory lane to revisit culinary creations from past chapters.

One of the more abstract culinary interpretations you can find on the island, Preludio is giving foodies an opportunity to go back in time with a tasting menu comprising highlights from their three previous menus.
Named The Preludio Story, the lunch and dinner menu condenses the essence of each of the chapters before — Monochrome, Time and Two Roads. Available for a limited time, the menu runs from 4 October onwards.
The black and white-inspired Monochrome contributes chef Fernando Arévalo’s La Cortina, a butternut squash agnolotti with a syrupy 25-year-old balsamic vinegar from Il Borgo. While the third chapter, Two Roads, brings the Waves Lapping on the Shore; a dish made of a clean-tasting consomme poured over sea urchin and chervil root.
