[dropcap size=small]T[/dropcap]he Cubans know how to kick back and relax, and Bob’s Bar knows how to do Cuba. The top-notch bar has just overhauled its al fresco area and styled its evenings as “Havana Nights”, and it’s not an empty promise.
Of course, the terrain is in their favour. The drive to Sentosa alone leaves the bustle of crowded Singapore behind, and the lush surroundings around the Capella property afford the establishment a sense of remoteness. The Capella clientele frequent the bar, so you can expect a certain pedigree to the attendant guests. Above the easygoing chatter, the lazy tunes of Carribean music (and some house) weave between the cigar smoke wraiths.
Yes, you can expect a well-stocked humidor. And yes, the barrel in the middle of the room holds the elixir of the Carribean: rum, straight out of Barbados.
Concocted by the fourth-generation master distiller of Foursquare Rum Distillery for Bob’s Bar, the rum is the resultant blend of months of rumination and back-and-forth. It’s absolutely delicious – smooth, golden and lilting, with vanilla and tropical fruit left lingering on the tongue in between sips.
It’s named Navegante for ‘sailor’, perfectly capturing the seafaring nature of the Carribean people. The textured and rich flavours are courtesy of three years in bourbon oak casks then five in former cognac French oaks.
Neat is how we like it, and what we would recommend for seasoned drinkers. Having it on the rocks draws out the citrus notes in exchange for taming the vanilla. Between the three cocktails we downed, an Old Fashioned did the Navegante the most justice, augmenting rather than masking its fruity notes.
