Come November, a new luxury hotel operating under the auspices of Marriott International’s EDITION brand will be opening in the heart of Orchard Road, bringing with it a yet-to-be-named signature restaurant helmed by celebrated Australian chef-author Josh Niland.

The concept? A “sustainable, modern-age, seafood-focused steakhouse”, drawing on Niland’s love for seafood both elegantly prepared and ethically sourced, in a home replete with “nods to stylish Old-World elegance and tradition”.

Before becoming a sustainable seafood guru with multiple award-winning restaurants and cookbooks to his name, Niland cut his teeth in The Fat Duck, Heston Blumental’s legendary three-starred fine diner in the United Kingdom.

He opened his first sustainable seafood temple Saint Peter in 2016 with wife and business partner Julie Niland, before expanding his footprint with three concepts: Fish Butchery, a retail market concept, a beachside takeaway joint called Charcoal Fish, and, most recently, yet another fish-focused restaurant in Petermen.

The Australian chef also found time to put his culinary acumen to paper, with “The Whole Fish Cookbook” and “Take One Fish” having reeled in multiple awards.

Helming multiple dining concepts at the hotel

At Niland’s upcoming restaurant in Singapore – his first outside of Australia – diners can expect an a la carte menu with an emphasis on ethically sourced seafood, large-format roasted meats like rib on the bone and crowns roasts, and some vegetables to balance everything out. 

The restaurant will focus on creating a circular economy within the establishment and the lobby bar to minimise waste while championing Niland’s commitment to sustainability.

It will be open for breakfast, lunch and dinner. More details will follow as we get closer to the opening of the EDITION hotel on Cuscaden Road. When it opens, you can expect four more restaurants, a rooftop pool, spa and fitness centre servicing 204 rooms.

The EDITION Singapore marks the hotel chain’s debut in Southeast Asia. The competition among hotels in the Orchard Hotel enclave looks set to heat up, with lifestyle complex COMO Orchard Singapore opening later this month. It will house a hotel and dining concepts such as Cedric Grolet Singapore and COTE Korean Steakhouse, which has a one Michelin star in New York City. Other hotels include Pan-Pacific Orchard and The Standard, which is a stone’s throw away from Shangri-La Singapore.
