Massimo Bottura

Acclaimed chef Massimo Bottura of three-Michelin-starred Osteria Francescana in Modena, Italy is set to open his debut concept in Singapore by this December.

The chef of The World’s Best Restaurant in 2016 and 2018 will be bringing over Torno Subito, a one-Michelin-starred Italian restaurant, which is at the W Hotel on the Palm in Dubai. Torno Subito is a retro and playful throwback to the Italian Riviera of the 1960s. While the breezy casual restaurant in Dubai overlooks the balmy beach, its outlet in Singapore will be nestled in the foliage of Dempsey Hill.

Torno Subito, which means “I’ll be right back” in Italian, is chef Bottura’s first restaurant outside of Italy. The restaurant opened in Dubai in 2019. Torno Subito Singapore will mark chef Bottura’s first permanent concept in Asia. In 2019, gourmands in Singapore had a taste of chef Bottura’s cuisine through the Gucci Osteria pop-up. Torno Subito will also open another outlet in Miami later this year.

Torno Subito Singapore will be located at Block 26 at Dempsey Road. It will be situated in lifestyle enclave Como Dempsey, which also comprises F&B concepts such as SuperNature and food and wine purveyor Culina.

Torno Subito is a partnership with Singapore-headquartered hospitality group Como Group, which recently opened Como Orchard. The lifestyle complex houses Cedric Grolet Singapore, which opens on September 14 and the Como Metropolitan Singapore Hotel.

The Como Group is known for partnering top food personalities, such as French pastry star Cedric Grolet for his debut patisserie in Asia, and chef Jean-Georges Vongerichten at The Dempsey Cookhouse & Bar.

In the lead up to the opening of Torno Subito in Singapore, a pop-up will be held at Como Cuisine restaurant in Como Dempsey from 20 to 23 September. Alessio Pirozzi, Head Chef of Torno Subito in Dubai will helm the pop-up restaurant.

Diners can expect dishes such as Cavatello Riviera, a dish of hand-crafted cavatelli pasta with carabinero prawns, red bell pepper sauce and smoked paprika and Navigando, poached cod and sauteed spinach, beetroot and lemon reduction. For desserts, there is chef Bottura’s take on tiramisu, which is called Tiramisubito!.

The pop-up, which is only opened for dinner, will offer a six-course menu that is priced at $200++ per person. Reservations can be made here.
