Fish Pool at NCO Club
Slurp and sip in style at this Champagne bar located in the heart of the city. Their oysters are from the Parcs Saint Kerber farm in Cancale — a French fishing village that’s located along the Brittany coast. Pair your bivalves with an impressive selection of bubbly — including stellar vintages of the esteemed Cristal; as well as labels from acclaimed boutique houses like Champagne Salon. The bar’s located right next to the NCO club’s swimming pool where — if you’re lucky — one might catch a glimpse of a mermaid in the water.

Greenwood Fish Market
A stalwart for offering great seafood, Greenwood Fish Market has one of the largest oyster selections around, with nine different varieties on the menu. Options run the gamut from fleshy Mary Points from Canada, to sweet, mineral Ostra Regals from Ireland. They also organise the World Oyster Festival (the current one runs until 31 July), where up to 25 different species are available for tasting. While Champagne selection here is focused — ranging from Moet to Dom Perignon — there’s an interesting choice of sparklings made in the same way, including a methode cap classique blanc de blanc from South Africa.

Humpback
Jigger & Pony group’s oyster-centric restaurant is celebrating its fourth anniversary, and that means $3 oysters all day, every day for the month of August. Even if it isn’t the anniversary, there’s plenty of reason to go, especially if you care you where your food comes from — the oysters here are seasonal, and mostly from the coastal regions of North America, where you’ll find lesser-known varieties with detailed descriptions of their provenance and profiles. While the Champagne selection here isn’t big, it’s all the good stuff like Dom Perignon and Krug’s Grand Cuvee. While Champagne is the star, a dry cocktail makes a great accompaniment too — try their Shuck It, a martini made with oyster shell-infused Four Pillars Rare Dry Gin, Dolin dry vermouth, and orange bitters.

MO Bar
There are few workday grievances that can’t be alleviated by some good champagne and oysters. MO Bar wants to ensure guests leave their worries (and possibly memories) behind by offering all the Ruinart and oysters they could want every Wednesday evening with the hotel bar’s new decadent happy hour, which runs from 6-10pm. While $68 will keep your tulip glasses filled with the classic NV Ruinart, we suggest bumping it up to the toasty and tremendously elegant Ruinart Blanc de Blanc for $98. Not only is it among the finest blanc de blancs on the market, its mineral freshness makes it ideal for shellfish.

The Spot
Located right smack in the middle of the CBD, The Spot has one of the best deals for oysters and bubbly in town — with a few catches. It’s only for ladies, and it’s actually prosecco. Otherwise, it’s the perfect end to humpday — you’re paying $35 for free-flowing shellfish and tipples that starts from 6.pm every Wednesday.
