Forget the traditional roast turkey and chicken, hotels and dining establishments are rolling out the perennially popular meat dish in novel flavours. They range from Indian to local flavours inspired by dishes such as laksa. We highlight some of the best eye-catching roasts to bring to your potluck gathering this Christmas season.

1. North Indian-style Roasted Turkey with Makhani Sauce, Goodwood Park Hotel

Goodwood Park Hotel is known for having novel Christmas dishes. This year, the heritage hotel has rolled out its turkey, which is inspired by flavours from Northern Indian cuisine. Ahead of roasting, the bird is battered in a fragrant blend of aromatics such as ginger, garlic paste, cardamom powder, and green chilli for two days and finished off with cheddar cheese and fresh cream. It is then roasted briefly for a second time to accentuate its flavours.

Accompanying the roast is a tomato and butter-based Makhani sauce, vegetable korma that is chock-full of lady’s fingers, French beans, cabbage, and mushroom, aromatic Kashmiri rice and tandoor-baked plain naan.

2. Roasted Laksa Turkey, Fullerton Hotel Singapore

One of the highlights of Fullerton Hotel’s Festive Takeaway Collection is this Singapore-inspired Roasted Laksa Turkey. Taking its cue from the popular noodle dish, the bird is marinated with aromatic spices such as chilli, garlic, galangal, turmeric, and candlenut. Rounding out the roast are side nasi kunyit (coconut and turmeric rice) mixed with cranberries, pickled vegetables, peanuts, ikan bilis crackers, and spiced coconut gravy.

3. Charcoal Fried Chicken with Dragon Fruit Dip, Orange Clove Catering

Try something a little out of the box with one of its new festive offerings from Orange Clove Catering. The charcoal fried chicken wings are crispy on the outside, yet juicy and tender on the inside. The dip is equally intriguing — a vibrant purple dragon fruit dip that cuts through the fat with a refreshing dose of tanginess.

Homegrown Italian restaurant and grocer Da Paolo Gastronomia present their Stuffed Boneless Roast Turkey, which has been skillfully deboned for easy carving. At the core of the bird is a flavoursome Cotechino — traditional Italian pork sausage, covered in chestnuts and shiitake mushrooms. The turkey is paired with servings of hearty roasted potatoes, carrots, and house-made truffle gravy.

At celebrity chef Nancy Silverton’s Cal-Italian restaurant Osteria Mozza, gourmands can look forward to Crispy Pork Belly that is drizzled with a spicy plum sauce. Also, make space for the Creamy Tuscan Olive Chicken, which is drenched in a rich and flavourful sauce and topped with juicy sweet olives. These mains are accompanied by contorni such as roasted glazed carrots wrapped in crispy pancetta and Parmigiano Reggiano potato gratin.
