Marymount Bakehouse is a sourdough bakery in Singapore with a modest storefront and a serious starter game — the starter is fed every night before the bakers go to bed, and the mother dough itself is maintained every eight hours to keep it active.

Dough here is mixed by hand to allow for flexibility, and goes through rounds of folding to build structure and depth in flavour. A standout here is the “Not a Croissant” sourdough, made by grating frozen butter and folding it quickly into the dough for a light, flaky structure. This gives a crisp buttery crust, with the chew and structure of a sourdough loaf.

Prices range from $14 to $20 per loaf, with flavours like a classic Pain de Campagne, Oolong Chocolate Chip, and Maple Country Nuts on the menu.

Woodlands Sourdough

Located along Upper Thomson Road, Woodlands Sourdough is a neighbourhood cult favourite bakery in Singapore with rustic vibes. Husband and wife team Nurhasanah Johari and Chalith Kariyawasam picked up tips on how to make sourdough from Chad Robinson of Tartin Bakery in San Francisco, and what started as occasional appearances at farmers’ markets has now become a physical brick-and-mortar store.

If you’re dining in, sample their different types of sourdough chocolate croissants, bagels, and even doughnuts — piped with luscious chocolate or vanilla custard. Or pick up one or two of your favourite sourdough loaves to enjoy as breakfast toasts.

Baker & Cook

Founded by New Zealand-born baker Dean Brettschneider, Baker & Cook is one of Singapore’s pioneering sourdough bakeries, specialising in artisanal sourdough loaves. Each loaf is made from a 37-year-old starter, affectionately nicknamed “Little Johnny”, and there are different types of whole wheat, rye, and wheat sourdough loaves to choose from.

Bake Anthem, founded by local baker Lex Pang, marches to the beat of long-fermented sourdough baking, made with a blend of flours and a starter developed over years of experimentation.

The sourdough bakery churns out classic loaves, seeded breads, baguettes, and focaccia, all part of the founder’s aim to make sourdough an easy part of daily lives. Besides full loaves, Bake Anthem also offers smaller sourdough loaves so customers can try different flavours before picking their favourite.

The Anthem’s sourdough is a rich, earthy loaf made from spelt, rye, wholemeal, and buckwheat flour, while the sourdough ciabatta is perfect for making sandwiches or dipping into olive oil. Got a sweet tooth?

Chu and Co

Come weekends, Chu and Co’s cosy open space along Lichfield Road is packed with families and pets relaxing on stools and picnicking on the bakery’s delish bakes. Founders Rui and Ling use speciality flours and play around with different grains to turn out tangy sourdough loaves and pastries that are always a hit.

While take-home sourdough loaves are available (don’t sleep on the spelt rye sourdough loaf blanketed with semolina and flaxseed), what we really love are the vibes and sourdough treats — think sourdough flatbreads topped with sausage bolognese, sea salt sourdough croissants, and sourdough pastries topped with goat’s cheese, honey, and mushrooms.

Tiong Bahru Bakery might have made waves introducing the buttery sweet Kouign Amann to Singapore’s shores, but its sourdough loaves definitely hold their own as well.
